怎样做水饺锅贴?

锅贴与煎饺的区别在于:锅贴正宗做法是生饺而不是熟饺!锅贴又叫生煎,做法是生饺子直接放入锅内闷煎。煎饺则是把饺子蒸熟后再煎。口感来说就是皮的韧劲不同。

1、把包好的饺子放进平底锅摆好,饺子与饺子之间要留有空隙。煎锅贴的工具当然是不粘锅,而且尽量是新的不沾锅,因为所有的不粘锅的涂层都会随着使用过程不断退化。街上的锅贴生煎店里面使用普通平底铁锅,人家那里靠的是几十年的经验,所以还是不要轻易挑战了。把包好的锅贴紧紧的排放在稍微预热并涂油平底不粘锅内,不用担心他们会粘在一起:因为要用面粉水形成脆皮,它们出锅的时候总会粘在一起,不过吃的时候还是很容易分开的,不太会彼此变得支离破碎。因为摆放过程可能需要一些时间,所以这个时候要把炉火关小,免得先放进去的比后放进去的火候差得太多。

2、将1汤匙面粉调成略稠的面粉水,注意不是浓稠的面粉浆。

5、等到锅里面汁水差不多收干的时候,就在锅贴上洒些切碎的小葱,做为装饰,也是加入小葱的香气,关掉炉火,如果你的不粘锅还算好用的话,这个时候摇晃一下锅子,锅贴应该会很容易从锅底脱落下来,否则还是需要借助一些小工具了。
